  • 1 medium Onion diced
  • 2 cups Vegetable broth low-sodium recommended
  • 1 cup Coconut milk canned
  • 0.5 cup Flour
  • 1 teaspoon Garlic powder
  • 1 teaspoon Onion powder
  • 1 teaspoon Salt
  • 0.5 teaspoon Pepper
For the Topping
  • 1 cup Crispy fried onions

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Sauté the onions and mushrooms in a large saucepan until soft for about 5-7 minutes over medium heat.
  3. Combine the flour, garlic powder, and onion powder into the pan, stirring well until mixed.
  4. Gradually add the vegetable broth and coconut milk, stirring continuously until the mixture thickens, about 3-5 minutes.
  5. Mix in the fresh green beans, and season generously with salt and pepper.
  6. Transfer the mixture into a casserole dish and top with crispy fried onions.
  7. Bake for 25-30 minutes or until bubbly and golden brown on top.
