  • 1 cup wild rice
  • 4 cups vegetable broth low-sodium recommended
  • 1 medium onion
  • 2 medium carrots
  • 2 stalks celery
  • 2 cloves garlic
For the Mushroom Medley
  • 8 ounces mixed mushrooms cremini and shiitake recommended
  • 1 teaspoon thyme
  • 1 teaspoon rosemary
For Creaminess
  • 1 cup heavy cream or coconut cream for lighter option

Method
 

Basic Instructions
  1. Rinse the wild rice under cold water.
  2. Combine wild rice and vegetable broth in a large pot. Bring to a boil.
  3. Reduce heat and simmer for about 40 minutes, or until the wild rice is tender.
  4. Sauté onions, carrots, celery, and garlic in a skillet until soft.
  5. Add sliced mushrooms, thyme, and rosemary to the skillet, cooking until mushrooms are tender.
  6. Combine the sautéed mixture with the cooked rice and broth.
  7. Stir in heavy cream, salt, and pepper. Heat through gently.
  8. Serve hot in bowls and enjoy.
